WANDERLUST | ‘Fresh from the sea’ buffet at Waterfront’s La Parilla

JUST when you thought that the endless food bingeing of the holidays was over, Waterfront Insular Hotel Davao came up with delicious way to greet the New Year. Yes, with more food but with healthier choices this time.

Last Jan. 17, Wednesday, hotel manager Bryan Yves Lasala, executive chef Bienvenido Chavez and their team presented the latest offering for their midweek “Fresh from the Sea” buffet at the hotel’s famous al fresco restaurant, La Parilla.

For their initial midweek feast, Chef Bienvenido prepared a buffet spread consisting of steamed Lapu-Iapu in sesame ginger sauce, fried fish with black beans sauce, mixed seafood Bicol express, sweet chili crab, and seafood-packed paella.

Freshly cooked mixed tempura (choice of squid, shrimps, fish and veggies), baked mussels with cheese plus seafood siomai and baked whole fish in Beurre blanc from their Japanese and Chinese stations are also included in the buffet.

Add to that, the freshest catch from gulf (think blue crab, blue marlin, squid, shrimps, tuna belly, tangigue, bagaybay, tilapia) go straight to sizzle at La Parilla’s Grill Station.

And there’s more – Filipino ceviche, prawn salad, shrimp cocktail with fresh lettuces, and an assortments of maki and nigiri at the Sashimi Station.

“With the efforts of the government of connectivity between Davao to the East ASEAN countries, we’re taking this as an opportunity to come up with a Halal dining outlet,” Lasala said.

Included in the hotel’s future plans is to engage in a Halal certification and make La Parilla as the center of the hotel’s Muslim-friendly dining destination.

“Chef Bienvenido’s years of culinary experience in the Middle East, including serving royalties and dignitaries, make him the best person to handle our upcoming venture in Halal,” he added.

The hotel’s seafood feast is available every Wednesday and Sunday until March 28 for only P718 per person.
